Homemade Tortillas
History of the tortillas:
The history of the tortillas goes back to the Indians of middle America. When the Europeans, which will later bring the Tortillas to Europe, arrived there, Tortillas were the most importent meal, because their basic ingredient is corn, which was easy to grow, perfectly adapted to the climate and contains importent substances, as starch, protein and fat. Today the tortillas are mostly industriel produced and exported, but in some poor areas of Latin America there still cooked in the traditional way. Therefore you have to macerate the corn and to mix it with ash the day before cooking. The next morning you have to wash the corn and grind it to Nixtamal or Masa (corn flour). Then you have to form the masa to thin tortillas and cook them on both sides until they begin to inflate. Now they were usually served together with salt or salsa.
